In this chapter we first outline some principles of quasielastic incoherent neutron scattering and give some examples for incoherent scattering functions. Thereafter, we focus on the dynamics of lipid molecules in a lipid bilayer discussing fast dynamical processes like intramolecular dynamics and protrusion motion as well as slow processes like transla- 32 tional diffusion. Finally we briefly present first results on the water dynamics in between the lipid bilayers. 1 Incoherent neutron scattering Since the scattering amplitudes for the two different relative spin orientations of neutron and proton are grossly different, due to the spin disorder of the proton spins neutron scattering from an ensemble of protons is overwhelmingly incoherent and measures directly the selfcorrelation function of protonic motion.
